For 4 people

Ingredients:

4 large French fries cut into 8 pieces
2 tablespoons olive oil
1/2 teaspoon ground pepper
1/2 teaspoon salt
1/2 teaspoon ground pepper
1 teaspoon Espelette pepper (or ¼ tsp cayenne pepper if you are very brave!)
1 teaspoon paprika
In a large bowl, combine the olive oil, salt, pepper and the teaspoon of Espelette or Cayenne pepper and paprika. Add the potato pieces and mix them well so that they are well coated with seasoning. Arrange the spiced potato pieces on the barbecue grill previously brushed and cook over medium heat, with the lid closed if you have a barbecue that closes, for about 20 minutes, turning them from time to time. Test the cooking with the tip of a knife: the patatas bravas are ready when they are tender.

Chicken wrap with guacamole

For 4 people

Ingredients:

1 pack of wraps
2 chicken fillets
1 jar of guacamole
1 small white onion
grated cheese (emmental or gouda)
some mustard
Brush the 2 chicken breasts with mustard, then cook on the barbecue for at least 10 minutes, turning them regularly. Check the cooking: they must be cooked to the core.
Once the chicken breasts are cooked, cut them into strips. In a small bowl, place the finely chopped onion, in another bowl the grated cheese, without forgetting the guacamole.

Serve wraps, chicken strips, guacamole, onion and cheese at the table; everyone can then compose their own wrap!

Ingredients:

2 beef steaks
160g strong chorizo, cut into thin rings
4 tablespoons parsley
4 tablespoons olive oil
2 tablespoons white wine vinegar

Make the marinade by mixing the parsley, olive oil, vinegar and 1 tablespoon of water.
Cut the meat into large cubes and place it on the skewers, inserting slices of chorizo ​​folded in 4.

Ingredients:

24 to 48 oysters.

Open the oysters, keeping as much water as possible and avoiding shell fragments as much as possible. Not sure about you? Ask your fishmonger to open them for you!

Place the oysters directly on the barbecue grill, lid closed if you have a barbecue with lid. Oysters are cooked when their water simmers and their edges shrink. Ingredients:

4 large ears of vacuum-packed corn
50g butter
2 red peppers (skinned and finely chopped)
1 teaspoon Espelette pepper
Mix the butter with the chopped fresh pepper and the Espelette pepper.

Cut the ears of corn into 3 pieces, prick them on a skewer and cook them for 5 min on the barbecue, turning them regularly. As soon as they are cooked, off the heat, brush them with chili butter and serve.

MARSHMALLOW AND CHOCOLATE BANANAS – 10 MIN COOKING

Marshmallow bananas and barbecued chocolate

For 4 people

Ingredients:

4 bananas
100 g chocolate chips
100 g marshmallow
60 g flaked almonds
Using a knife, incise the skin of the bananas on the curved side. Peel the skin off the fruit without removing it: it must hold at least by one of the two ends, ideally both!
Also lightly incise the fruit.
In a bowl, combine the chocolate chips, marshmallow and almonds; stuff each banana with the mixture.

Wrap each banana in aluminum foil and cook on the barbecue grill over medium heat for 8 to 10 minutes, ideally covered to obtain tender bananas. A perfect recipe to exploit the heat of your embers until the end of the meal!

BARBECUE ROASTED APRICOTS – 20MIN COOKING

Apricots

For 4 people

Ingredients:

8 to 12 apricots
6 teaspoons of acacia honey
a few sprigs of fresh rosemary
Rinse the apricots and cut them in half. Remove the pits.
Arrange the apricot halves on a rack. Ideally, use a closed barbecue that will prevent your fruit from spilling and will give a more tender cooking!

Brush the apricot halves with honey; do not hesitate to fill the pit with honey, especially if your fruit is not very ripe.

Place a few sprigs of fresh rosemary on the grill and cook over the coals over medium heat. Watch the cooking: the apricots are ready when they are very tender and about to turn into a compote!
